Pecan Snail Cookies

As a native Arkansan, I was born knowing how to call the hogs and possessing an uncontrollable desire to work pecans into as many recipes as possible. And while pecans are delightful in any number of salads and mains, I love them best in deserts. Like this one, where they’re rolled into a lightly sweet pinwheel cookie. Dates round out the rest the filling, bringing all the warm caramel notes of pecan pie filling sans the Karo syrup.

Pecan Snail Cookies

Ingredients

  • 1 cup pitted dates
  • cup boiling water
  • cup flour
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ cup white sugar
  • ¼ cup +2 tbsp brown sugar
  • 1 tsp vanilla
  • 4 oz cream cheese
  • ½ cup butter
  • 1 egg yolk
