Ginger Rye Cookies

There’s a fatal flaw with most cookies I make. It’s not their taste or their texture. It’s that I can’t eat 20, or 30, or 50 of them at one time. They’re either too sweet, too rich, or just…too much cookie. Thus, I often long for a cookie version of a tortilla chip. Something I can snack on while, say, sitting on the couch watching
