Spicy Scallion Noodles

Why did it take me so long to find oyster sauce? I mean, we’d been introduced hundreds of times. That savory undercurrent that so many dishes surfed on top of. I just didn’t know it. Now, I’m making up for lost time. Like with this spicy number!

So quick. So easy. So dang good. So much for making anything else for lunch this week.

Spicy Scallion Noodles

Ingredients

  • 8 Tbsp oyster sauce
  • 8 Tbsp mirin
  • 2 Tbsp chili crisp
  • Tbsp minced garlic
  • 1 cup chopped scallions, greens and whites
  • 4 packages wheat noodles
  • crispy fried onions for serving

Instructions

  • Stir together oyster sauce, mirin, and chili crisp in a small bowl. Set aside.
  • Heat a pan over medium heat. Drizzle a little oil in and saute the garlic and scallions for 1-2 minutes.
  • Add the noodles and sauce and continue cooking until the sauce has thickened and coated all the noodles.
  • Serve topped with crispy fried onions.
